In June 2021, Vasko Dimovski opened the doors to Vasko's on Park at 21 years old. He set up shop at 266 Park Ave — in the heart of Rochester's Cultural District — with one clear idea: do the trash plate better than anyone else in the city.
The plate is a Rochester original, found on every corner and in every pizza joint. But Vasko knew that what separates a good plate from a great one isn't the protein or the sides — it's the sauce.
"Every corner you go to, there's a trash plate. But it's all about the sauce. Anybody can make a burger, anybody can do the home fries, mac salad — it's all about the meat sauce. Ours is original from my grandfather from back in the day, and that's what makes us different."

See What We MakeA Family Legacy
Vasko's opened in 2021 and is a continuation of a grand family history in the restaurant business. His family has always provided outstanding cuisine and service. Charlie (Vasko), his grandfather, collaborated with Nick Tahou from 1965 till 1984. His grandfather and mother, Dijana, opened and ran Empire Hots from 1991 to 2001. From 2006 to 2016, Taci's Irondequoit Hots was owned by his parents, Dijana and Z. They were well-known for their excellent meat sauce and award-winning "Plate". Vasko pledges to continue the family legacy of exceptional food quality and service with his own restaurant.
